Watermelon, Feta & Mint Skewers

Makes about 12 skewers · About 5 minutes

Nothing says July like fresh, crisp watermelon. Cubed and skewered with savory feta and cool mint, then finished with a drizzle of thick balsamic glaze, this is summer on a stick. It comes together in about five minutes and brings the ultimate summer vibe to any backyard gathering.

Ingredients

  • Half a small seedless watermelon, cut into 1-inch cubes
  • 8 ounces feta cheese, cut into bite-size cubes
  • 1 bunch fresh mint leaves
  • 2 tablespoons balsamic glaze
  • Flaky salt and cracked black pepper, to taste
  • Short skewers or party toothpicks
  • Optional: a light drizzle of extra-virgin olive oil

Steps

  1. Pat the watermelon cubes dry with a paper towel so the glaze clings instead of sliding off.
  2. On each skewer, thread a cube of watermelon, a mint leaf, and a cube of feta. Repeat if your skewers are long enough for two of each.
  3. Arrange the finished skewers on a serving platter.
  4. Drizzle with balsamic glaze, add a little olive oil if you like, and finish with a pinch of flaky salt and a crack of black pepper.
  5. Serve right away, or chill for up to an hour for an extra-refreshing bite.

Make it your own

Swap the mint for fresh basil, add a thin ribbon of prosciutto for a salty-sweet twist, or set out a plate of these alongside grilled favorites. Either way, they disappear fast, so consider making a double batch.
