Apple, Brie & Honey Crostini

September is peak apple season, and this five-minute appetizer shows it off. Toasted baguette topped with creamy brie, thin apple slices, and a drizzle of honey is sweet, savory, and the perfect start to a cool-evening gathering. It comes together fast and always disappears first.

Ingredients

  • 1 baguette, sliced on the diagonal into 16 pieces
  • 2 tablespoons olive oil
  • 8 ounces brie, sliced
  • 1 crisp apple (Honeycrisp or Fuji), thinly sliced
  • 3 tablespoons honey
  • Fresh thyme leaves
  • Flaky salt and cracked black pepper
  • Optional: a handful of chopped toasted walnuts

Steps

  1. Heat the oven to 400 degrees. Arrange the baguette slices on a baking sheet, brush lightly with olive oil, and toast for 6 to 8 minutes until golden at the edges.
  2. Lay a slice of brie on each warm toast so it softens slightly.
  3. Top with a couple of thin apple slices.
  4. Drizzle with honey, then scatter thyme, a pinch of flaky salt, a crack of pepper, and the walnuts if using.
  5. Serve right away, while the toast is crisp and the brie is soft.
